Fat-Free Almond Fudge Cake
February 23, 2006I adapted this recipe from an IBS cookbook. I’ve made it three times in the past few months and I assure you, no one would ever guess it’s fat-free. It’s also very easy to make–you don’t even need beaters, just a wooden spoon. Give it a try!!
Sift together dry ingredients:
2 cups flour
2 tsp. baking soda
6 T. cocoa powder
1 T. cornstarch
1 cup sugar
1/2 tsp. salt
Add wet ingredients:
2 cups unsweetened applesauce
1 T. vanilla
1 T. almond extract
Stir together with a few swift strokes just until blended. Pour into bundt pan (sprayed with non-stick oil) and bake 50-60 minutes at 325 degrees.
Once cool, add glaze (I double it):
1/2 cup confectioner’s sugar
2 T. cocoa powder
1 1/2 T. water
1/2 tsp. almond extract
Peppermint extract may be substituted for almond extract (just make sure you use the same extract in the cake and the glaze).
